Rosa Pérez Gregório, a researcher at the Associated Laboratory for Green Chemistry (LAQV-REQUIMTE) in the Department of Chemistry and Biochemistry at FCUP, appeared on Porto Canal’s “Mentes que Brilham” program on October 7 to explain why a diet rich in fruits and vegetables with high polyphenol content can help prevent food allergies.
“It is important to have adequate and always personalized food because each person may have specific needs. In our study we chose national crops…and that is why we collaborate with Horpozim…to use only those vegetables that are produced in the traditional way.”
The study, funded by the Foundation for Science and Technology and involving researchers from the University of Porto, may lead to a set of recommendations regarding the consumption of these foods. Although further research is needed, the results already indicate that it is possible to prevent food allergies through the consumption of polyphenols in the diet.
